Daring Confit & Cassoulet

Agora é oficial! Ocupamos um lugar na Daring Kitchen, uma das cozinhas mais famosas e atarefadas da blogosfera. Hoje é a primeira vez que participamos dando resposta ao desafio que a Daring propôs aos seus membros este mês. 

E o desafio era confeccionar uma Cassoulet ou, em português, caçoleta (pequeno pote ou frigideira) - no fundo, no fundo... uma feijoada... Cumpridos os requisitos obrigatórios, do meu esforço resultou esta Caçoleta carregadinha de calorias, ideal para aquecer os dias frios que temos passado. Tenho pena que o aroma ainda não seja transmissível via net uma vez que essa é a caracteristica mais agradável deste prato, cheira tão bem!

CONSERVA DE ALHOS

(VEAL CASSOULET WITH GARLIC CONFIT)



Our January 2011 Challenge comes from Jenni of The Gingered Whisk and Lisa from Parsley, Sage, Desserts and Line Drives. They have challenged the Daring Cooks to learn how to make a confit and use it within the traditional French dish of Cassoulet. They have chosen a traditional recipe from Anthony Bourdain and Michael Ruhlman.


Ingredientes / Ingredients

700 g carne de vitela (veal meat)
500 g feijão manteiga (beans)
200 g touçinho fumado fatiado (bacon sliced)
1 cebola (onion)
1 ramo de coentros (bouquet of coriander)
100 g cogumelos (mushrooms)
1 farinheira (flour sausage)
1 morcela (blood sausage)
1 chávena de conserva de alhos (cup of garlic confit) - receita no final/recipe in the end

Colocar os feijões de molho durante 12 horas. Cozer o feijão com a carne de vitela, a cebola cortada em quartos e o ramo de coentros durante cerca de meia hora, temperar com sal e pimenta a gosto e cozer durante mais meia hora ou até o feijão ficar tenro. Reservar.
Na caçoleta, dispor as fatias de touçinho fumado de modo a forrar o interior e dispôr uma camada de feijão cozido sobre a qual se dispõe a carne de vitela cortada em bocados.

(Soak the beans for about 12 hours. Bring the beans to a boil with the veal meat, the onion sliced in quarters and the bouquet of coriander for 30 minutes. Season with salt and pepper to your taste and let cook for another 30 minutes or until the beans are tender. Reserve.
Line the cassoulet with the bacon slices and lay out one layer of beans followed by the veal meat cut into pieces.)




Sobre a carne dispõe-se mais uma camada de feijão e, sobre este, os cogumelos cortados em quartos e os alhos em conserva bem como duas ou três colheres do azeite da conserva.

(Over the meat, lay out another layer of beans followed by the mushrooms cut into quarters and the garlic confit. Season with two or three tablespoons of the confit olive oil.)


Após mais uma camada de feijão, dispõem-se os enchidos previamente cozidos em água sem sal e cortados em rodelas grosseiras.

(After another layer of beans, lay out the sausages previously boiled in unsalted water and cut into thick slices.)




Rega-se com a água de cozer a carne e o feijão até cobrir os feijões e leva-se ao forno durante uma hora à temperatura de 180ºC. Reduz-se a temperatura para 130ºC e deixa-se cozinhar durante mais uma hora. Pode servir-se no próprio dia ou guardar para o dia seguinte, bastando para isso levar ao forno durante 15 minutos antes de servir.

(Pour water from the meat and beans boiling into the cassoulet, enough to cover the beans and put in the oven 180ºC for one hour. Reduce to 130ºC and let bake for another hour. You can serve the course after it's done or you can reserve it for the next day, taking it to the oven for 15 minutes before serving.)



Acompanhei com fatias de pão torrado...

CONSERVA DE ALHOS
Garlic Confit

1 chávena de dentes de alho descascados                           (1 cup of garlic cloves)
Azeite para cobrir os dentes de alho                    (Olive oil to cover the garlic cloves)
2 colheres de sal                                                             (2 tablespoons of salt)
2 folhas de louro                                                                        (2 bay leafs)
1 ramo de alecrim                                                            (1 spring of rosemary)

Levar os ingredientes ao forno num recipiente fechado durante 1 hora à temperatura de 180ºC. Deixar arrefecer e refrigerar num frasco.

(Take the ingredients to the oven in a pot with lid for one hour at 180ºC. Let cool and refrigerate in a jar.)

  3. Que maravilha! Posso até imaginar o sabor que ficou! Parabéns!
    Eu também pretendia usar as carnes e linguiças que são usadas na feijoada no Brasil, mas não pude fazer o desafio por lá. Estava fazendo tanto calor que faria até mal comer! Esperei até meu regresso à Coréia, mas tive que me contentar com as poucas opções que temos por aqui em termos de embutidos. Quem sabe no próximo inverno brasileiro!
